The Adobe Digital Editions software on the 500/505 does not currently support full justification. That's a shortcoming of the Sony, not of the ePub standard - all other ePub devices support full justification. Given that Sony's newest reader, the PRS-900, does support full justification, there is a reasonable likelihood of a firmware update to address the issue.
I'm not sure what you mean about "half a sentence being on one page and half on another" - can you clarify? The Sony does have widow and orphan control for ePub files, so it won't generally start a sentence on one page if only one line of it will fit on a page.
