It should only format each book once, but for each 3 fonts. When I start reading a new book the first thing is to hit he fontsize page 4 times (I usually use M and it starts with S) and look out of the window for 2 minutes.
After that, chancing pages is as fast as it is with a paper book (which we are so used to we don't even notice it, soon I got used to the e-reader chancing pages the same way). Chancing fonts happens at the same speed.
