Well, technically there's still a way to go to 1.1.1 from 1.1.0 but it involves some trickery and complete wipeout of your nook.

nookdevs used to have instructions for the manual 1.0.0 update download which would restore your nook to clean slate and from there you can go directly to 1.1.1.
