You can do stuff like that in Adobe PDFs by embedding fonts, which makes the PDF larger but preserve the original font for the viewer.

And I still suspect there will be devices that can display ePub that won't be able to display the embedded fonts, even if present.
I believe the ePub specification presumes graceful degradation -- that the device will simply ignore things it can't do, and not throw an error or fail to display the book.
