As desertgrandma said, it's not knowledge we need, it's the quintessence of humanity or something. I still think children are a good bet. If we take a wider range of ages, then the oldest children (say 16) will have enough memories to be able to reconstruct something resembling human life on earth, while still having the adaptability of their age.
