Yes. Prince is the actual program that does the XHTML-to-PDF conversion. The script just extracts the XHTML files from the ePUB and passes the options to Prince. XMLStarlet is used for parsing the XML and getting the right filenames and metadata.

I've never used MacOS, so I can't be of great help, but there is probably an easy way to install both. Prince has a direct MacOS X download, for XMLStarlet there's this post.
