A lot of different opinions here. For me our tradition has been to leave the big city behind and head for our cottage in the mountains (two hours drive from our capitol here in the south). We have snow guaranteed, and it is white and quiet everywhere. We could have gone skiing there more than two months already.
At Christmas-eve (here in Norway) our family gathers in the cottage for a traditional meal of ribs from sheep (could also be from pork) with Christmas beer and Aquavit. I do also love Lutefisk but usually have that at some party prior to the Holidays, and maybe americans have also tasted in the little town of Maynott (though with french fries...).
In the time between Christmas and New Year we walk over to the alpine slope for some downhill skiing or snowboarding, or maybe we just slip on our cross-country skis outside the door and head for the mountains.

I just love the holiday season even though I respect others that maybe want to be at a warmer place on vacation (there is only a 5 hours flight to the Canary Islands out of Africa).
