I have a couple of recipes for the Turducken and both state that the order of the duck and chicken is entirely dependent on the size of the respective birds (i.e. it doesn't matter).
Never seen an ostrich mentioned (that would make it an Osterducken, I guess) but that seems too big a step - I think you'ld need at least one intermediate between the turkey and the ostrich, say, a vulture
