That has been discussed many times. The easiest way is iPhoneBackupExtractor. Sync and backup your iphone/itouch in Itunes and then open the the extractor. Books are in application/com.amazon.lassen/documents/ebooks. The free version only lets you extract one file at a time. Just get the *.prc files.
