Here's a one-pot dish that is quick and simple. I call it mediterranean couscous. (If you are North African, then please stop reading now. It is not very authentic.)
1. Sauté a finely-chopped onion in some olive oil. Add some garlic, if you like it. If you have a red or green pepper then add it too.
2. Then add bits of cooked chicken, chorizo, merguez, sun-dried tomatoes (or fresh ones, skinned and chopped). Use your imagination to devise a pleasant savoury mixture. Season it with a bit of salt, some cumin, or some saffron, (or whatever you like).
3. Add a cup of easy-cook couscous and a cup and a half of boiling water, or stock.
4. Bring to the boil. Clap a lid on it, turn the heat to very low. Cook for 5 minutes.
5. Eat it.
Vegetarians can omit the meat and add a mixture of vegetables. This is a good way of using up those little jars of artichokes and aubergines in oil.
