Since calibre pulls The Economist from their website and it's free I doubt there would be a problem with copyright infringement. I'll be glad to post some pics if you like (I think others would be interested). The WSJ is a paid subscription.

I think The Economist turns out really good. I can't speak for The WSJ, but I read The New York Times every day and I think it's great. The LA Times and The Washington Post also format well.
