Actually those prototypes you saw weren't really eInk at all, but rather a different form of epaper (I'm not entirely sure where all the confusion started).
Fast forward to 1:10 to see a brief clip of real color eInk in action:

The Flepia uses a bistable LCD. Not eInk.
