Yeah... I guess. Say you go for a 60 degree angle between the panes. You could either rig two cameras, and alternate which one you shoot with, so you don't have to keep repositioning the camera, or shoot all the odd pages, then all the even pages. (Or make a fancy track that would reposition the camera between each shot, I guess.)

It still needs some kind of LEGO-on-steroids robotics to tilt the book back and turn the pages between shots.
