I live in a world of approximation, so I'd say about 10 pounds of peeled and cut apples, 1 cup of butter (not salted!), 1 tea spoon of nutmeg (I don't have cinnamon these days) and 3 cups of brown sugar (those apples are mighty tart!). Cook the apple with a little water until they turn into a sauce when you stir them, add butter, sugar (to taste) and spice of your choice, then blend to a smooth and creamy consistence (I have a hand blender, the kind you can use to make milk shakes). It keeps 6 months in the freezer, 1 month in the fridge. And it makes a great gift!
