My favourites are anything by Elizabeth David. I've got her complete works. I probably use her French Provincial Cookery most often.
For baking, Marguerite Patton has some useful books, and I've found her recipes more reliable than Delia Smith's. Mary Berry also has some good baking recipe books.
I've got about a thousand cookery and household management books, but will be having a cull soon.
