My current favorite:

How to cook everything vegetarian. Mark Bittman.

Two new ones for me, that I'm really enjoying (I'm on a slow-cooking kick right now):

135 best vegetarian slow cooker recipes. Judith Finlayson
Fresh from the vegetarian slow cooker. Robin Robertson.

Old standbys:

The joy of cooking. Rombauer(s). (Well, duh!)
The vegetarian epicure. Anna Thomas.
Simply vegetarian. (You probably can't find this -- no author, but wow, great and easy recipes. Publisher: Crystal Clarity.)

My favorite old hippie cookbook, which I keep mainly for the picture on the back of the book jacket, in which three women in long dresses and buns are gathered around a wooden table drinking tea (such a period piece!): Laurel's kitchen. Laurel Roberson, Carol Flinders, Bronwen Godfrey.
