Some programs I use quite a lot:

1Password (password management)
Adium (IM)
Coda (web development)
CrushFTP (FTP server)
DEVONthink (information manager)
Mellel (word processor)
Parallels Desktop (virtualization - haven't tried VMWare so I don't know how it compares)
Pixelmator (image editing)
Skim (pdf viewer & annotator)
The Hit List (GTD app)

For backup I use Time Machine.
