I have settled on the following typefaces for e-ink screens:

Chaparral Pro Caption
Arno Pro Caption
Garamond Premier Pro Caption
Karmina
Scala
ITC Mendoza Roman

Garamond and Karmina are more classical-looking, especially if you use ligatures, and probably not what you're after. Chaparral Pro is my go-to wedge serif for modern stuff, followed by Scala. Mendoza Roman and Arno Pro are my favorites for "tweeners". I keep them at <10pt almost always though, and I suspect that if you go much bigger than 10pt, you can switch to a different optical set (not Caption, though Caption is good for being low-contrast [less extreme tapering]).

Some of these you'll have if you've purchased an Adobe product.
