Because the devices are different. The 600 has more features then the 700 and the 300 has less. Plus, if I owned a 300 and wanted to find messages about the 300, It would make it very easy to find the forum for the 300.

Right now there are eight forums for Sony Readers. With the categories and a seperate forum for each Reader, you would have 6 forums (including the Daily Edition) and a way to easily add new forums for any new devices.
