You'll need to use UTF-8 for those characters. Use this meta tag:
<meta http-equiv="Content-Type" content="text/html; charset=UTF-8" />
As far as I know, there is not a specific recommendation for Kindle/Mobi, but I always recommend using UTF-8. Makes my life easier.
