Sure, remove the rum, add in a tsp of rum extract, and knock the powdered sugar back to 2 cups.
The rum is there only for the flavor, not the alcohol content. 2 shots of rum split amongst a dozen (or 2 dozen if you use 2 cakes) won't have any effect on anyone.
Well, normally. If you have a rare case of having some condition that has an overblown reaction to alcohol, then you might feel a little buzz. But only if you eat a LOT of the cake.
