I really have to wonder who designs the software for these things. iRex has two systems with nice large screens and the ability to read PDFs, and neither has the right functions for document management as you're describing it.

At least the iLiad, poor orphan that it is, is open enough that we can work on remedying the design gaps. Amazon seems insistent on keeping the Kindle platform locked down.
