I have often used Kinko's for cutting the spines off workbooks, and it's only a buck or so.

(This was to have the workbooks coil-bound to make them easier to use, but I imagine it would be the same if you wanted to scan rather than bind.)

Edited to add: It might be easier if, for a hardbound book, you cut the covers off, leaving only the spine.
