The flexible screen means it has a plastic backing instead of the current glass backing. This should make it more rugged, but it seems it was not a simple change. It has delayed the introduction of this screen for about a year.

16 gray levels mean 4 bits devoted to each pixel. The technology permits a mix of black and white ink in a single pixel. 4 bits binary is 16 total levels of gray.

Color mean color. They are working on color but don't expect it this year. It is likely the initial color will be 256 colors or 8 bits per pixel. The current indications are that pixel density will go down on color devices, how much is currently not known. The current pixel resolution on the 9.7" screens is about 150 ppi, but we know 200 ppi is possibile since it is being used on 5" devices. Since color typical cuts this in half (assuming the rumored 4 color scheme) it is likely that the color density will drop to levels that are similar to computer screens.
