If you are planning to do a number of book conversions, it helps if you can get cheap paperback versions that you can cut up. Then, beg, borrow, purchase or steal a Scansnap S510.

That will scan both sides of a page in about 3 seconds, and will very neatly go through a stack of 50 pages at a time. It automatically converts the scans to PDF and will do the OCR for you as well. It also rotates the scan so that each page is oriented the way you would normally want to have it be.

An exacto knife is my favorite tool for removing pages.
