Hey Marc,
Quote:
A local food market here gets in Boylan sodas from the States, and their Creme Soda is magic, but the shop being a "boutique" food market, it's pricey.

That is exactly why I am learning to make my own. A health store here sells "Virgil's Cream Soda" which is the best I've had. It is also expensive. So I thought "How hard can it be..."
It's actually really easy. So far. For a 2 liter pop bottle mix:
~2 cups cane sugar (any sugar will do but this is the best flavor to sweetness balanced sugar I have found)
~2 tsp vanilla extract (pure or better)
~1.8l water
-once it is mixed to a solution pour into bottle.
~add 1/4 tsp yeast
-cap bottle and leave to sit at room temp for 12-48 hours, until the bottle firms up. Until you can't squeeze the bottle any more.
-Place bottle in the back of your fridge for 24 hours. this will kill the yeast and allow it to settle to the bottom of the bottle.
-siphon or carefully pour the soda into another bottle being careful to not allow the settled yeast to mix back in. you can use cheese cloth to remove the yeast if you want.
-Pour a glass and enjoy with favorite book (substitute any activity you choose)
I have also experimented with concentrated fruit oils for flavor. That is still a work in progress. I am also going to start learning how to make root beer soon as well.
