SOLVED:
As i was copying an extracting the .zip file - I was getting a 'double' folder in my /plugins directory:
(koreader/plugins/koreader.plugins/koreader.plugins/
Fixing this solved the issue.
Leaving the thread as it may benefit someone else who has this issue?
