Many eink ereaders don't run Android at all. Some that do have Android either don't have the Google Framework (so some apps don't run) or can turn it off. Playstore is part of the Google framework.
If you want privacy, then only load ebooks via SD card or USB. No Internet. Browsers are pretty rubbish on eink anyway.
All real mono eink works fine in direct sun. Coloured eink is poorer than OLED/LCD with a true matt screen.
