There are two ways to use the dictionary, one is the one you described, the other is tapping the center of the screen, and then "Dictionary": this enters and sets the reading to "dictionary mode", into a text book now it'd only need to tap a word (not even need to press into as for highlighting) and the dictionary opens, within the word tapped (including the other options as to highlight it, etc..).
To exit that mode it needs to tap the icon on the right side, when dictionary is open.
