1. I would personally go with Readest on non-eink devices, and keep them both in sync using the koreader sync server or readest's built-in sync server.
2. Yes, you can copy the settings folder (and the dictionaries/fonts/wallpapers/plugins folders) to your new devices. I think there was some plugin that let you do this automagically as well.
