UPDATE: One thing that does seem to help--but is far from a panacea--is aiming for the bottom of the page-turn button. That seems to mostly register as a single page-turn event, rather than if I click towards the middle or the top of the button, in which case there's a >50% chance that it will register as two-or-more page-turns.
It's still not 100% of the time, though. But I'll take it, I suppose.
