I did the OTA update without reversing the jailbreak. /mnt/secure/su is still present and operational.
For some reason I can't register to create the device PIN, so as soon as I've finished my current book I'm going to un-jailbreak and factory reset. I'll then test if the jailbreak goes through on the fresh system... and hopefully the device PIN feature will then work also!
