if you dont see it in tag browser layout go to, settings -> look & feel -> tag browser -> Display -> make sure Formats(formats) is checked

I would call that 'filtering' as well as any use of the search bar (inc via the tag browser)
Sorting is
Ordering: 1,2,3 or A,B,C or AZW3, EPUB, MOBI . The latter is only done from a custom column (Mine is #masterformat. A single value)
