I got away with my noob mistake it seems. The slot I flashed the broken boot to was slot b.
In recovery I could set slot a as the active slot, but upon the bootlogo it would panic after a few seconds, and then after a few panics it would switch back to slot b.

I wondered if slot a was on an older firmware and was causing the boot panic.
Since recovery's anti rollback compares update timestamps with the system timestamp of the currently active slot, I wondered if I could install the update on slot a.

I booted to recovery_b, entered fastboot, changed slots, booted to bootloader "non fastbootd fastboot", then rebooted to recovery_a.
In recovery_a I sent the update.zip over adb, it got to 50%, then said that verification passed and it's installing the update step 1/2

Now it's fully booted and everything is great again. I am going to work on a custom recovery before I mess with boot again to be safe.
