Personally, I just learned most of what I know (which isn't all that much, but enough to get most of my books to display without problems) by trial and error - comparing the code in the css file with the live preview and figuring out what it did. It wasn't as difficult as it sounds - the epub code isn't very complex compared to, say, computer code (which a layperson usually can't figure out just by looking at it). Still, I believe there are several guides to css/html online, google search should find them.
