Interestingly, one of the statements that has caught my attention the most from some people who prefer a colour e-reader to a monochrome one is that the background graininess takes away the feeling of reading on an electronic device (while for monochrome purists, that background graininess produces an unpleasant sensation). I don't have that feeling with e-readers (I prefer a white background), but I do with tablets and smartphones: I find white unbearable. Background textures were designed to alleviate that feeling of artificial reading (although I find them equally artificial). Personally, I don't like them on colour e-readers, but some people use them for that very reason.
