ETA: There are many books incorporating color out there! And a lot of people saying there aren’t! For some reason.
The C.S.Lewis, The Chronicles of Narnia - the one with the COMPLETE lion's head looking right at you on the cover [57.7 MB] - is full of color illustrations. A very nice ebook.
