Not too many. But cookbooks often do, and sometimes other non-fiction. You might sometimes see color maps or illustration in the fantasy genre. Or color accents like headings in some books.
But overall, your basic fiction book is mostly
not going to have color illustration, unless comics, graphic novels, or children's books as you mentioned.
I was reading a non-fiction library book, and it covered a time period before color photography was around, as well as a time period after color photography the norm, and the author DID some of the photography himself.
I read the book on my BW Kobo Sage, and then, expecting some images
might be in color, went to go look at them on my iPad, and to my great disappointment,
every single one was a BW image, even though some could easily have been color, and would've been better in color. Sigh.
I did read a non-fiction library book a while back,
Still Horse Crazy After All These Years by Jim Wofford, and it turned out to have some color photos when I looked on my iPad.
Whenever I encounter a book that I think
might have color, I check via my iPad, if it does, then I tag it in Calibre as having "color content." IF I ever buy a color e-ink reader, I figure it'll be a help.
