All most all ebooks with significant colour are fixed layout. They need usually 11″ or larger tablet.
Almost all novels just have text. A few have mono illustrations, and an even smaller number of reflowable ebooks have colour illustrations.
Covers are mostly colour so they look good on the web shops.
There are also comics in colour. I'm not sure you can buy Comixology for eink? They are Amazon
