You can try as normal vfat or ext4.

Tried another USB stick, it mounted as vfat. That didn't work either. Very weirdly as well, after it attempts to flash the zip the device no longer becomes bootable normally, just to recovery. I then have to flash the stock reovery, and do a factory reset for it to boot normally again.
I'll try reformatting the second USB stick that I have
