If the setting does not match the current default then that indicates the book in question was converted sometime previously and the conversion settings for that book were locked in at that time. You can press the "Restore defaults" button at the bottom of the conversion dialog to discard the settings from prior conversions.

It only respects the default preference if that particular book has never been previously converted.
huh. I have been wondering what the OP is doing that I'm not because I've never seen that behavior. But quite a while ago, I set my preferences to make all books epub first (better for working with on the PC), and convert to KFX ebook only to put on my Kindle. I'm constantly taking stories off once read, then they update and I put them back on as newly converted KFX. Which behaves properly as it keeps the ebook default. would it make a difference that I have Calibre delete the KFX file when the story is updated? Would that wipe out any 'wrong' lingering conversion preferences? or is it that the way my process works (epub ->kfx ebook ->kindle)I don't have the 'wrong' preference ever set?
