Strangely, after I did a Show Info on Calibre in Finder, it updated the icon correctly for the App itself, but no matter how many times I relaunch the app, the old icon keeps showing up in the Dock. I even tried to kill the dock through the Terminal, to no avail.

I am actually surprised they haven't updated the old Calibre icon to something modern, because darn that thing is ugly, and there's a bazillion better alternatives online, and likely a horde of designers who would contribute to a new one in an instant.
Try calibre 8.12. What you tried is not the current version.
