The Oasis (10th generation, the latest) may have 5.18.2, which is not compatible with Winterbreak. Earlier Oasis models are on earlier firmware versions, and would be.
If it's latest Oasis, and somehow it's still on 5.16.x or earlier I don't know what will happen or if there is some 100% sure way of preventing update. Maybe there is some window of opportunity after your credentials are accepted and (for example) immediately turning off your WiFi, while update is still downloading and can be interrupted before it finishes.
It's commonly a 'feature' when you register a new, never-registered Kindle but I have only one experience registering a previously owned one (Oasis 2 I think). I don't remember it updating right away.
