I think the display is the key thing here. The dedicated eink readers aren't bad at 300 ppi but Moonreaderpro +running on an LG V20 has a better LCD display at 513 ppi, on a desktop Calibre on a 27 inch monitor is acceptable as well.

A new LG V20 is available on ebay for around $140 can. or $100 US, buy a VS995 if you can find one they can be upgraded to android 8. Some other models can't be upgraded to android 8.

Dell refurbished is a good source of laptops, I concur that they can be cheaper than a fully loaded Pi and aren't so limited.
