Personally, removing embedded fonts is one of my standard items in the Modify Epub plugin setup. One recent ebook, for some reason known only to the publisher, embedded Merriweather Light. It's a decent font but the light version is not the font I would choose for eInk.

When it comes to choosing a font, to me, if I am noticing the font, it's not the right font.
