Just to provide a user's viewpoint:
I get very upset when I can't switch to the fonts I favor (mostly bolds) because I often have a hard time reading lighter and smaller fonts.
Fortunately, I can usually remove the inbuilt font information with a Calibre conversion or edit.
But I curse the publisher and--if it is bad enough--put up a comment saying that "some people will find this text unreadable".
