I did a complete uninstall and deleted all caches, temp files, and anything associated with calibre then reinstalled it. Problem seems to be fixed now and epubs are opening instantly instead of the 1 minute it took beforehand.
I had the foresight to make a copy of my preferences and style adjustments, the file was found in /appdata/roaming/calibre for me and it's named "viewer-webengine.json". So, I didn't have to worry about tweaking everything again to my preferences. Another thing to note, I don't use or keep any libraries. I usually download an epub and then just open it with calibre viewer. So, I didn't lose any of my past books or anything like that, but that might not be true for you. I'm not that tech savvy, so I just highly recommend making a backup/restore point beforehand if this method goes wrong for you.
