I assumed that if I click
Restore defaults button in the Book conversion dialogue it would remove the relevant row in the conversion_options table - but it doesn't. What the button does is to "Use the defaults" for
this conversion. The only way I've found to remove them is via the explicit checkbox in Bulk metadata edit.
