HTML question about italics and bold

Talk about shutting the barn door after the horse has left... but I'm wondering if the deprecation of the <i> and <b> elements has any practical consequences in ebook design? Is using <span> elements (with appropriate css) in their place best practice in a belt-and-suspenders sense of extreme caution, or is there a reasonable expectation that using <i/b> elements will actually foul up the final ebook?
