Fern text is very nice and easy to read –*someone recommended it on another thread here.
I also like Crimson Pro, Crimson Text and FreightText Pro.
Though maybe not as "easy" to read, I still find EB Garamond very pleasant, but it requires a bit of additional weight on e-ink.
